Equipment

  • 1 Ice Cream Maker
  • 1 Immersion Blender (Or blender of choice)

Ingredients

  • 1 Can Full Fat Coconut Milk
  • 3 Tbsp Maple Syrup (or sweetener of choice)
  • 3 Tsp Vanilla Extract
  • 3 Egg Yolks
  • 2 Tsp Javy Coffee Concentrate

Instructions

Option 1: 24 Hour Process

  • Add 3 egg yolks to a glass container than can sustain both heat, and being placed in the freezer!
  • OPTIONAL: Heat Coconut Milk, Maple Syrup + Vanilla Extract up until the outside begins to bubble, and coats the back of a spoon (if you're okay with consuming raw eggs (local/organic/home-raised eggs), then you do not have to heat up – go to OPTION 2!)
  • Once mixture has been heated, slowly slowly begin to pour + mix into eggs, using an immersion blender, being careful not to heat eggs to quickly making scrambled eggs!
  • Let cool, place in fridge for 24-48 hours to allow to thicken, then freeze in Ice-Cream Maker (according to your ice-cream make manual!)
  • Serve + Enjoy! Or Place in Freezer to enjoy later!

Option 2: Raw Eggs + Less Wait Time!
