A super quick + easy recipe, resulting in delicious, crisp, + tangy pickled beets, which you can eat as is, or add to a salad! Use your Instant Pot or Boil the beets over stove-top!

Pickled Beets

A super quick + easy recipe, resulting in a delicious, crisp pickled beet, which you can eat as is, or add to a salad!

Ingredients

  • 2 Lbs Fresh Beets
  • 1 Onion Sliced
  • ½ cup Monk Fruit (or Honey/sugar/coconut sugar)
  • ¾ Cup Apple Cider Vinegar
  • ½ Cup Water

Instructions

  • Wash and cut ends off your beets
  • Place beets in Instant Pot (Pressure Cooker) on trivet, with 1 cup of water, high pressure for 12 – 20 minutes (more/or less depending on size of beets – you want them tender where you can pierce them with a fork, and easy to slice)
    *** OR place in a large pot of water and boil for about 20 minutes, or until tender.
  • While Beets are cooking, combine sugar, ACV, and water in a small saucepan. Heat until sugar dissolves. Remove from heat and set aside.
  • Quick Release Instant Pot, and test doneness of beets using a fork – (pressure cooking longer if necessary), then allow to cool enough to handle. (or rinse with cool water)
  • Slice Beets
  • In a large mason jar(s), layer sliced beets and onion.
  • Pour vinegar/sugar/water on top & add additional water if needed to fully submerge the beets.
  • Cover with a tight-fitting lid and refrigerator for 5-7 days before eating.
